These delicious Lima beans are black in colour and turn purple when cooked. The vigorous vines need good support and will produce heavily for one to three years. The beans can be cooked and eaten plain, added to soups, or made into a tasty bean dip. Soak seeds overnight and sow directly in the ground. Lima beans have a creamy texture but are low in fat. Since they are a plant food, they don’t contain cholesterol. And because they aren’t processed, they don’t contain trans fats. Most of the fat found in lima beans is healthier, polyunsaturated fat.
